For the competition cooks or even the home cooks has anyone tried this? I cooked a brisket a week ago and saved all the drippings. The drippings are intesified but liquid goodness. Next time I smoke a brisket I want to use the drippings to inject the next brisket. Has anyone tried that before?

I did this to experiment because so many times I judge the brisket at contests and it tastes like beef broth or dry and no flavor. I figure if I inject smokey flavored goodness into it, it might keep the flavor longer.

Well when I cooked it I actually braised it a little with some good dark beer (I know there are people who don't believe in beer). The juice that came off appears to be 20-30% fat and the rest is probably beer and other liquids. I will cook another brisket soon and inject it with this, and report back.

We routinely cook briskets in pans and catch the juice for au jus after defatting. We nearly always have to cut the juice with beef broth because it is very rich. May want to try this if you ar injecting with the meat juice.

Ok,
I will have to try it now to satisfy my curiousity. I may end up destroying a brisket in the process but I can just add it to the list of things I have destroyed in the past.

BOS,
What didn't you like about it? I figure the extra fat would keep it more tender throughout and the flavoring would help the middle. I am curious to hear what your findings were.

Ive never done that before, but it sounds like a new experiment on the horizon.
