Anybody have how they smoke Bologna? Was thinking of trying it.

I made a coring tool out of a piece of 3/4" PVC pipe and a 3/4" dowel. Poke a hole through the middle and then go in from each end back to the middle hole, punch your plugs out of the pvc with the dowel. Fill it with pepper jack cubes and cut you some plugs to plug it back up. Use toothpicks to hold you plugs in. Baloney is a must do everytime I cook for somebody. They have come to expect it.

Knew about the scoring but never thought about binding the rub. I've only done chubs a couple of times. I like to get 1/2" thick slices of a good beaf bologna, sprinkle with rub, and quick grill over high heat. Nice roll, good cheese, grilled onions & peppers, my favorite imported from Cleveland Stadium Mustard ... makes a darn good sandwich.
