Hi Gang,
Ok, I have read a good many of the posts on the 24 pages of the Catering/Vending link....Insert pat on the back.

I am moving forward with my plan to cook Q. To start, I have a local late night bar crowd eatery owned by a friend that I can run anything/everything through..I would at this point need only sell him the meat and he would price the final product anyway he likes. I will also have access to at least 20 rock concerts where the same guidelines are used, I just get him the meat.
Right now I want to get my feet wet before diving all the way in on a larger smoker, but I do plan to do this soon.
My question is this, even if I am only cooking 4-10 butts and nothing else I am going to need a fridge/freezer dedicated to my cooking. I envision a larger smoker and cooking 20 or more butts, ribs and other stuff at a shot in the very near future so a small fridge probably isn't going to do it. I would need it to store prepped/uncooked meat, then store it there once cooked before I can deliver...I would guess I would also need freezer space as well...

Not a clue on where to begin here, your input is appreciated...thanks.

Some day, when you decide to slow down and semi-retire, you need to sit down and write your memoirs. All we know and all we've heard, doubt that any of us have heard all or even most of your stories.
I'd be first in line to get the first autographed copy.
By the way ... on the fridge/freezer. Had a large capacity refrigerator only in the basement. Wasn't getting used much and gave it to a "Mr. Goodwrench" friend a couple of years ago. Wish I hadn't done that and even mentioned it to him a couple months ago and he told me he'd give it back to me. Guess I'm glad he has it - he saved me about $700 on a car repair this week. Think those savings can by me a new fridge if I can justify it to my wife.

Arctic air makes some nice units that run about 1200.00 dollars each.I found a good used one for 400.00 that was only 1 year old.Restaurant Depot can get them and they go on sale about 3 times a year there.

WE RENT REFRIGERATED TRAILERS FOR FESTIVALS AND SPECIAL EVENTS. WEEKEND COST ABOUT $175.00. SEEMS MORE COMPATABLE THAN OWNING AND HAVING STORAGE AS WELL AS MAINTENANCE ISSUES. ONCE A PERMANENT SITE IS FOUND , THE PURCHASE OF PERMANENT EQUIPMENT IS RECOMMENDED. RESTAURANT AUCTIONS YIELD WALK IN COOLERS AND FREEZERS AT FAIRLY REEASONABLE PRICING RIGHT NOW IF LOOKING TO DO ON THE CHEAP ..
