No definite plans for this weekend but that could change.
Tentative out to dinner plans for Saturday and indoor cooking Sunday - still trying to figure out the Grandma's potato dumplings and planning one of her beef stews.
Saw pork belly on sale at one of the local multi-ethnics and think season is "getting short" for pork belly. May be doing something there and if something catches my eye when we shop tomorrow, will do some "stock up" cooking. + replied to Billy's earlier post going to run by the local wild game guy ... so who knows?

I've got a 5 and 2 3 gallon crocks.
My first father-in-law was a professional chef and master baker. I never knew him. He passed away years before I met my 1st wife. He was the cook on one of, I forget which, expeditions to the South Pole back in the '20's or '30's. From the stories that I heard, he must of been a heck of a guy. I have his kraut cutter, cabbage knife, boards & stones that he used in his crocks. Wish I had his fruitcake recipe - it died with my 1st wife.
My Dad has the 5 gallon glass carboy that my Grandpa used to ferment his cabbage and peppers. I will bring it back in June when we drive to Ohio. I will also take a good look around Dad's basement and garage to see what else is there. I found, cleaned, and use when I'm there, an early '70's Weber kettle 4 or 5 years ago.
Think the one thing I will always regret is when 1st wife's, first husband's father passed away in the early '90's, we were offered his wine press. We lived in the Chicago area by then and "Grandpa" passed away in Port Colburn, Ontario. We did not go get it. I do not know what happened to it. Never met the man, but like Three Dog Night said ... "He always made some very fine wine!"

CACTUS JUST BOUGHT A 3 GALLON STONE CROCK .. ALWAYS LOVED THE FRESH CUCUMBER SLICES MY WIFE PICKLED IN NINEGER, SALT, SUGAR AND A SPRIG OF DILL.. IF I CAN PULL THIS OFF IN SANITARY FASHION I AM THINKING THIS WOULD BE GOOD GARNISH, OR SIDE FOR ALMOST "ANY" SMOKED MEAT. RESTAURANTS DO NOT LEND THEMSELVES WELL TO THIS KIND OF ITEM AS SPACE NEEDED FOR 2-3 CROCKS AND QUALITY CHECKING DO NOT LEND THEMSELVES WELL TO THE PROFITABILITY OF OVERALL OPERATION . HOWEVER A COUPLE FRESH PREPARED SIDES WILL BE NOTED BY THE CUSTOMER FOR SAME REASON .. I PLAN TO DO A TOMATO ASPIC FOR SAME REASON .. AND WHO DOESN'T LOVE A SWEET CORN CAKE..??

Did not make it to the wild game guy so no turtle soup.
Did get to the local multi-ethnic (most independent grocers in the area are multi-ethnic) - it is primarily Hispanic oriented. Got 5 lb. of pork belly, so I'll be making bacon but have to read up on the process. Saw something unique - center cut pork chops that are still attached at the backbone - 6 chops in three pieces. They're cut about 1 1/4" thick - the three pieces weigh 5 1/2 lb. They're rubbed with, well I cleaned up my rub shelf last week, and dumped 5 or 6 jars that had a little bit in them together. Will go on the WSM in the A.M.
Still going to do a batch of the potato dumplings and make the stew.
Doing a jar of pickled eggs and beets. Easter / early Spring tradition in my family. Dad told me he made his yesterday. We've always used jarred or canned whole baby beets but told him I was thinking of doing mine with fresh beets. Bought 2 1/2 lbs. of fresh beets.

HAVE JUST TRIED A 12 HOUR COOKED PESOLE, AS POSSIBLE INGREDIENT FOR MY WHITE CHILI..CONSIDERED DOING IN THE SMOKEHOUSE FOR THE ADDITIONAL FLAVOR . MAYBE NEXT TIME..HEADING FOR M-N-M MEATS, UP THE ROAD A PIECE . THEY HAVE INEXPENSIVE OXTAILS FOR MY BEEF BROTH NEEDED FOR MY REGULAR CHILI.. OUTSIDE TEMPS WARMING INTO THE 60'S .. MAY NOT BE IN THE CHILI MOOD MUCH LONGER NOTE HERE I LIKE TO SMOKE THE OXTAILS A BIT BEFORE BOILING THE STOCK OUT OF THEM ADDS A NICE BACKGROUND TO THE CHILI ..
