I've got some baby backs, a pork loin, some eggs and hamburger patties on the Stump with some mesquite wood. Pretty weekend here. :)

For Easter, we did tenderloin steaks. Used a skillet because I wanted to make a pepper-brandy sauce and I haven't yet figured out how to get the crispy-yum-yums off the grill grate into the sauce pan without my wife seeing me do it...

I've cured about 10 lbs. of pork belly this week for bacon.
Almost 8 lbs. is cured with maple syrup, apple juice, sea salt and brown sugar. This is skin on pork belly. Will leave skin on about 1/3 when I slice. Skin that I remove, I'll vac pack some and save for making beans later and turn the rest in to cracklings. Will use hickory for smoke.
Bacon that I'm a little excited about. is cured teryake style. Pineapple juice, blue agave syrup, soy sauce, powdered ginger, and fresh crushed black pepper. I only cured for approximately 36 hours due to concerns about pineapple enzymes starting to break down the pork belly. Skin was already removed when I bought it. Will use white oak for smoke.
Grilled pork chops and angus beef hot dogs for dinner tonight.
