Six butts, a pan and a half of beans, two pans of potato salad, and a pan of mashed potatoes for two catering gigs. I love getting paid to cook!

I didn't cook last weekend but did make a batch of ceviche' for Mother's Day cookout at nephew's house
Not cooking this weekend - going to Indianapolis - may grill something down there.
Not cooking Memorial Day weekend - going to southern Illinois - down by town Superman grew up in. Plan to stop at the original 17th St Bar and Grill either on the way down or on the way back.
Will cook 1st weekend in June but as far as I know right now it'll just be hot dogs, burgers, some brats and Italian sausage for grandson's 3rd birthday party.

SOME SUBELTIES ARE LOST ON "HIGH" COOK BUT UNLESS A PRO, IT WONT MAKE THAT MUCH DIFFERENCE. I COOK EM THAT WAY NOW AND THEN JUST TO SHOW FOLKS THEY NEED NOT BE AFRAID OF THE HEAT.. JUST DON'T STAB EM AND FOIL EM . TAKES LONGER AND SUBSTITUTING BEEF FLAVOR FOR SOME STEPCHOLD OF WORCESTERSHIRE.. HAHAHA. A LITTLE RUB TO BOOST FLAVOR AND THREE 1/2 HOURS SEEMS TO BE ENOU=GH .. I DO MISS THE "SMOKE FLAVOR" WITH SLOWER COOK TIME..

I have a brisket and pork butt on power cooking -- 350+ -- this was not my original intent. This was suppose to be a tune up cook for competition brisket and butt. Things changed last night at 10:30 when I was told I got to work today. Got home in time to put meat on at about 3:45. We'll see how it does on a fast and high cook.

Hey Billy that sure sounds like some polish chili. He's not polish but for some reason Evan Willams always shows up when they come over.

MY LAST "POLISH" CHILI BECAUSE I AM USING LAST OF MY POLISH KIELBASA FOR THE MEAT INGREDIENT, OVER ELBO MACARONI AND TOMATOES. SERVED WITH A LITTLE ONION, CRUMBLED FETA (ITS WHAT I HAD) AND CORN CHIPS TO SCOOP IT UP SLOWLY. MAKIN IT LAST AS LONG AS POSSIBLE. A COOL POLISH BREW OR TWO ..WE KNOW IT SIMPLY AS OLE BLUE..LET THE WEEKEND BEGIN...AAHHHH!
