Alright who is cookin what this weekend ????? I have two wild turkey breast in brine now will have some wild turkey and butter injected in them two large chcikens with the same treatment on them they will have the beer can on them too, and some good ol missouri whitetail back straps wrapped in fresh cured bacon on the smoker man it is going to be a great weekend at the camp

Cooked over 100 lbs of butts for a neighborhood party Sunday. Butts were moist and tender. Had alot of happy eaters.
Also did a small brisket for a lady to take home.
We also did a test cook with 2 new chicken recipes for our next competition. We may have something here. Got a real good flavor profile on the 2 recipes.

Got a 10# brisky on. Some bacon wrapped cheese and ham stuffed chicken breasts. A few abts and some apt's. Atomic potato turds. I've been working on these for the past few cooks, and they keep gettin better. :)

Got 16.5 pounds of pork butts going on tomorrow morning, throwing some chix gizzards on there later in the day and ribs for Monday.

Everything is already off... 6# brisket done in 4 hours.. The temp ran away from me for a while. Gonna have to get used to it.....

Im still using some wood... Just using charcoal and wood chunks.... I know it feels weird not buring half a cord of wood to cook....

First cook on my new smoker today.... Got a brisket and a tenderloin going.. First time using a guru too... Cant wait to see how it turns out.. This is the first time not cooking on a offset stick burner.... Should be interesting.......

Daughter is coming in from Seattle saturday for a few days. So on sunday we're going to smoke 6 slabs of St.Louis style ribs and 3 chickens. Monday it'll be hamburgers and sausages.
