Annual Xmas party last night, served pulled pork and a rotisseried "ducken". Deboned a whole duck, seasoned with olive oil, rosemary and sage, stuffed it with a deboned chicken which was seasoned with the same mixture plus sundried tomatoes.

Tied everything up and spit roasted it at 350 for about 2 hours till internal temp hit 165 and it was out of this world!!!! (In my humble opinion....)

Billy,

Great minds think alike because just last night I thought about I would do the exact and mix up the two.. BOS rants and raves so much about doing the same so I said what the heck, I will give it a try today.

I'll be smoking cheese for the first time ever today. Have mild cheddar, white cheddar, gouda, and fontina. Going to go for a cooking chamber heat of 80f with applewood for 1 hour.
