I HAVE ALWAYS THOUGHT THE BEAN OR NO BEAN CONTROVERSY A BIT SILLY .. I THINK THE RULE WAS INTRODUCED BY WOMEN THAT MIGHT HAVE BEEN OFFENDED BY THE ODIFEROUS NATURE OF A CHILI CAMP . OR MAYBE IT WAS CONSIDERED A SAFETY MEASURE BY SOMEONE STANDING BACKSIDE TO THE CAMPFIRE. CERTAINLY NO COW HERDER WOULD CONSIDER A CATTLE DRIVE WITHOUT COOKIES SEVERAL HUNDRED LBS OF BEANS BEING STASHED SAFELY IN THE COOK WAGON ..

It added a very nice consistency and made the gravy thick yet fluid.

Combined with my superior skills at blending spices (and a superb dark beer) and you would think again!

Just because it can be bought on a shelf doesn't mean that it's the best thing out there...it just means that a combination of the right amount of money, good marketing and the desire to do it all came together to form a sellable product!!! Not taking any thing away from Billy Bones, just stating the facts!!!

Paul...thanks for the idea...may try it myself now that we're officially in the chili season here!!! Few things I like better in the winter to eat than chili!!!

ACTUALLY CHILI COMPETITION LED THE WAY FOR ME TO GET INTO COMPETITION COOKING... MICHIGAN MAY NOT BE HOME OF "BEST CHILI" BUT THE BEER DRINKING THAT WENT WITH THE COMPETITION LEFT ME IN A CLASS OF MY OWN .. CHARLEY STROH (YUP THAT STROH) WAS GREAT FAN OF CHILI AND WAS CHIEF OR HONORARY JUDGE AT MANY MICHIGAN EVENTS. HE WAS PARTICULARILY CHARMED BY THE FACT THAT I CHOSE NOT TO PUT BEER IN MY CHILI BUT WENT STRAIGHT FROM THE ICE CHEST INTO THE COOK.. WE SHARED ONE OR TWO COOL ONES OVER THE BRIEF SPAN OF MY "GREAT BOWL OF RED DAYS" .. IT WAS AN HONOR AND GREAT FUN .. CAROLINA QUE IS ABSOLUTELY RIGHT A LITTLE LUCK AND 30 YEARS HARD WORK ON THE COMPETITION CIRCUIT WILL LEAD TO MORE LUCK. THE MANY FANS OF BUCKSNORT CHILI MIX TESTIFIES TO THE PRODUCTS LONG HISTORY AND (PLACE OF HONOR) ON GROCERS SHELVES..AND DEER CAMP KITCHENS..

Some people say...

Chicago is a baseball town with a drinking problem.

Others say...

Milwaukee is a drinking town with a baseball problem.

We make the chili separate from the pintos. I cook the those Mexican strawberries in another pot alongside the chili pot. The beans, I think, like chili peppers, should be a personal choice. Your guests may like a little or a lot. So I let 'em mix it together themselves to suit. Next time I'm fixing the beans cooked first then mashed and refried. Your recipe looks perfect, Billy.
