What a sad day it is in Hannibal Missouri as the spring wind blows the soft smell of cherry wood smoke across the yard. I have lost a battle to save my beloved pile of cherry wood, we have battled ants, termites, rot and wood bees but even I could not win the battle of time. The last couple of cooks I have done with the six year old cherry wood the out come was less than what I wanted, the smoke was strong and the taste was over bitter and strong. I used some of the newer wood it was just fine. Has anyone had problems like this, I know it may be odd to have wood sitting around for years but I keep four to five loads on hand at any one time. This was a loss of about one truck load.

It sounds to me that the wood was bad when you bought it. If it was kept under cover and off of the ground, it should be fine for many years. I can understand your pain though. It's never a good feeling when you realize that it's just to far gone and not good for much more than a fire place or fire pit.

The good part is that I have people almost every week calling me about a tree they want removed, and if it is a fruit tree or a good oak or pecan I will go cut it down for the fire wood this lets me keep several loads of wood in stock at any time of the year. I keep it dry and off the ground and the outside of the shed treated with termidor to prevent ants and termites. Now that you spoke of it that wood was always kind of strong Tim but the last few months it has went off the charts strong , maybe my taste but I do not know but it is all ash now as I put it thru the fire pit at camp boy it made the place smell good all the cherry on fire. Workin on about thirty small apple trees hope I can get ahold of them.
