Pounded a flank steak out then piled on roasted red peppers and atichoke hearts that had been marinating in olive oil and crushed garlic and pepper jack cheese then rolled it and tied it. Put on the grill with the fire off to on side and shut the lid. Temp was 275, it cooked about 2 hours. This ones definetly a keeper.

Sounds good. We like to marinade in a chimichuri sauce and grill hot to 130. Slice thin and Mmmm is it good.
