| whats the minimum time to rub Billys Beef rub on a brisket before smoking....last minute smoke for a large group tomorrow and Im worried about the rub not getting through....... |

FOUR HOURS IS GENERALLY ENOUGH TO ALLOW FOR PENETRATION. WHICH IS MINIMAL OF COURSE.. HOWEVER THE INGREDIENT, PAPAIN DOES HELP OPEN THE FIBERS TO ACCEPT A FRACTIONAL MORE THAT YOU MAY BE USED TO WITH OTHER RUBS..IF COMPETITION TIME ALLOWS I WILL COMPLETELY COVER A BRISKET WITH COMPETITION RUB.ADDING RUB AS MUCH AS 24 HOURS IN ADVANCE OF ACTUALLY PLACING THR BRISKET IN THE SMOKEHOUSE. ADD ANOTHER HANDFULL OF BEEFMASTER AS THE ROAST GOES IN. ABOUT HALF WAY THROUGH COOK TIME (REGARDLESS OF INTERNAL TEMP) I WILL ADD ANOTHE GENEROUS HANDFULL AND CLOSE THE SMOKER QUICKLY . I LIKE TO KEEP HEAT CURVE ALWAYS MOVING UPWARD THROUGHOUT THE COOK AS I BELIEVE WE GET A BETTER BREAKDOWN OF FAT AND ABSORPTION INTO THE ROAST IF WE CAN KEEP THE INTERNAL TEMP FROM BOUNCING UP AND DOWN WITH SAUCE BASTING, ADDING FUEL AND TAKING TIME TO WRAP AT 160 ETC. .. THIS METHOD BUILDS A GOOD BARK WHICH IS EXTRA TASTY WHEN CHOPPED INTO THE FINAL PRODUCT ..

Papain is a neat protein tenderizer. Pretty cool idea using in the rub ingredients.

A TRIGGER FOR MY WIFES MIGRANES (BESIDES LIVING WITH ME) WAS MSG. WHICH I ONCE USED A GREAT DEAL. A WOONDERFUL FOOD CHEMIST (ZINNIE) INTRODUCED ME TO PAPAIN ( NATURAL FRUIT EXTRACT). TWO BENEFITS CAME FROM PAPAIN .(1) FLAVOR ENHANCEMENT WITHOUT A LOT OF "HOT" PEPPERS. (2)I ELIMINATED HALF OF MY WIFES MIGRANES... OLE BROWN EYES LOVED OUR FORMULAS SO MUCH THAT SHE FOUND A WAY TO INCORPORATE THEM INTO SOUPS,SALAD DRESSINGS AND NEARLY EVERY ITEM FROM OUR CATERING MENUS..RED BEANS AND RICE IS STILL ONE OF MY FAVORITES AS WELL AS HER CAROLINA SLAW... Papain, besides being a natural tenderizer, is also a great digestive. Taking two papain tabs after a meal will greatly reduce bloating and help your body digest faster and more efficiently.
