The PJ’s BAR–B–QSA Story

The PJ’s BAR–B–QSA story begins in the mid 1960’s when Carolyn and PJ became high school sweethearts in their hometown near Buffalo‚ NY. They married‚ graduated together from college and became elementary school teachers near Albany‚ New York. In 1974‚ they began a small barbeque catering business‚ PJ’s BAR–B–Q Catering‚ out of their home and spent their summer vacations doing barbeques and county fairs. In 1984‚ they bought and operated a seasonal restaurant in Saratoga Springs‚ New York‚ and named it PJ’s BAR–B–Q‚ while continuing to teach. After ten years‚ they finally stopped teaching to devote their full attention to operating their restaurant. In 1995‚ PJ Davis‚ a charter member of the National Barbecue Association‚ had an idea that formed the heart‚ soul and menu of the restaurant from that day to this.

“I thought‚ ‘Let’s take the best American regional barbeque favorites and serve them here‚’” he said. From 2008–2011‚ he acted on the thought and took several road trips across the United States in search of the best regional barbeque. The Davises‚ along with their son‚ Johnny‚ traveled from one side of the country to the other‚ learning which wood to use while smoking meats‚ which methods of cooking each region favored and popular barbeque foods indigenous to those particular areas. They chose a popular recipe from each region and renamed their restaurant PJ’s BAR–B–QSA with the by–line‚ “A Taste Tour of American Barbeque.”® Now their diners can select from among New York “State Fair” chicken‚ Memphis or Kansas City style ribs‚ Kansas City burnt ends‚ North Carolina pulled pork‚ Texas brisket and beef ribs‚ Virginia smoked sausage and Pacific Northwest smoked salmon. The menu is full of other favorite barbeque choices such as Brunswick stew‚ cheese grits‚ bbq beans‚ black–eyed pea salad‚ fried okra‚ hush puppies‚ sweet potato mash and collard greens. They even offer their own beverage‚ Crystal Beach Loganberry‚ a cross between a red raspberry and blackberry non carbonated fruit drink‚ produced by a Coca–Cola bottler in Buffalo‚ NY. In addition‚ there are traditional Southern desserts like bread pudding‚ sweet potato and pecan pies‚ red velvet cupcakes and fruit cobbler. They have taken the best of America’s barbeque regions and put them under one roof‚ with the slogan – “Barbeque’s United Tastes of America.”®

‚Our customers taste generations of tradition in every bite. Our unwavering commitment fuels the passion and excitement of the BAR–B–QSA brand as we move forward. My goal is to create a barbeque chain‚” PJ Davis said. ‚I was told I couldn’t have a national BBQ chain because each region’s specialties were so particular. I don’t agree with that belief. I believe folks can enjoy great barbeque no matter where they are from or live. It’s exciting to think about what we’ll do next.”

It was the Davis family’s genuine entrepreneurial spirit that inspired them to build upon their 41 years of success. PJ, Carolyn, son Johnny, and daughter Jady are devoted to serving authentic, traditional American barbeque, in the same manner as generations before them. ‚Barbeque – It’s not what we do…it’s who we are.”®
