Smoke signals from Ormond Beach, Fla.

By Kent Harriss

What do you get when two top award-winning BBQ teams combine forces and open a BBQ restaurant?  I’ll tell you — “Unbelievably Great BBQ” is what you get. When we heard that Dana” Big Papa” and Janet  Hillis with FK and Cindy Whited had joined forces and opened the Smoke Shack BBQ in Ormond Beach, Florida, we knew that a road trip was in order.

The back of The Smoke Shack offers outdoor dining at picnic tables under the shade.

The car was loaded, with the whole crew making stops along the way to add more family to the party. We left Lake City for what we hoped would be BBQ heaven at the Smoke Shack. We arrived at about 6 p.m. on a Saturday evening, and when I opened the car door and smelled the smoke, I knew this must be the place. We were greeted inside by Dana and the crew and made to feel that we were truly welcome.

You don’t expect to get competition BBQ at a restaurant, but that is what the Smoke Shack delivered.

They have an extensive menu of the usual BBQ restaurant items, with a few interesting additions that we had to try. They had a special sandwich called the “Big Papa” which was pulled pork, delicious slaw, and grated cheese on a bun. Several of us ordered that and it lived up to its namesake — it was over the top.  A couple ordered the BBQ chicken plate and found it to be moist and with a great smoky taste. We also ordered a slab of the St. Louis ribs to share. I had bragged on how good both of the teams’ competition ribs were and we were not disappointed. The sides were also great, with most comments on the smoked rice and the macaroni and cheese. You don’t expect to get competition BBQ at a restaurant, but that is what the Smoke Shack delivered. They also have great looking desserts, but maybe we can try them on the next trip when we aren’t so full.
